It's a fucking cliche, but I think Bayonetta/God Hand/Viewtiful Joe is a good basis for how Superman melee-combat would work. Rapid damaging jabs followed up by a mighty finishing strike that sends the enemy flying. Superman almost exclusively uses his fists, and as a precursor to Kenshiro/Jojo et al. an infrequent strategy was to pummel the enemy repeatedly with faster-than-light punches. Platinum combat frequently has an aerial component to it, which would obviously need tweaking for an entity that can fly at will. You could even do things like "slow down" time to represent his super speed, as an analog to Witch Time or MGR's precision cutting, to handle judicious use of things like heat vision or freeze breath.
The real issue is of course, how do you handle everything outside of combat? Is it linear level progression or is it the standard open world? How do you make an open world interesting to someone that can travel faster than light, punch through obstacles with impunity, and can fly(as opposed to the "super gliding" of superhero games like Arkham or Prototype). Obviously Superman isn't going to have the kind of game where you can just murder innocent civilians, and no console is going to be able to handle massive and complex destruction physics that can be triggered at any time.

Probably not. Platinum is bad at weakening their protagonists when Superman has the abstract weakness of only being one person.

A good Superman game would be a puzzle game designed like an action game, where you have to figure out how to save large numbers of people using the environment and your powers, making bridges with ice breath, knocking down a building to it props another up, and then you have to fly in and grab the people who fall out, etc.

I think the superhero that would fit Platinum the best is Spider-Man.

He's incredibly acrobatic and is often in aerial combat, which fits DMC/Bayonetta gameplay; also has tons of villains that would make great boss fights.

I'm curious as to how free flight would be implemented in a Platinum style game. It's not Superman if you can't fly whenever you want.

A mix of tenkaichi fighting mechanic with superman return flying would work pretty well.

The whole point of playing superman is to feel like you're the character, and freedom to explore is an integral part.
