That's less the artstyle itself and more the things surrounding it. If they simply use the new artstyle but keep everything exactly the same, it would be pretty good.

Paper Mario 64 was going to be Super Mario RPG 2 in name only. None of the original team was working on it because Intelligent Systems is not Squeenix.
Rather the people that did work on SMRPG at Squeenix went on to make AlphaDream who make Mario & Luigi, that's where the actual devs are.
Diorama isn't the right word. PM, and TTYD to a lesser extent, were aiming for a pop-up storybook aesthetic. The arts and crafts aesthetic didn't become prominent until Sticker Star.

To be honest those seem to be super minor changes. 90% of the enemies seem to not have been changed. Hell, I'm surprised they actually used both designs of Dry Bones.

I think it's because the dialogue makes puns out paper so people just see it as Paper in general being the joke.
The game also does use the style for jokes but, then again, so did the earlier games.

Probably because of how common the latest games shove the paper aspect into your face via the dialogue & them being self-aware, along with the fact they have real-world items as being their own strange entity. Color Splash is better than Sticker Star with it but it's still there enough to be obnoxious, it's like knowing someone who repeats the same joke all the time & still thinks it's funny. This is not to dismiss the fact that PM64 literally starts with Kammy being taped into the story & Mario gently floating down after falling in Goomba Village by the way.
I know it was self aware, I'm specifically talking about once everything became about arts and crafts aesthetics. The first two were just Mario RPGs with flat characters on a 3D plane, which is why it was called paper in the west. TTYD took notice of this and added the curses.

Only thing that upsets me is the removal of the white mage magikopopa.
The point is that the comedy in the first 3 games came from the fun and developed characters, not the setting they were in.
From SS onward there is no more character, so all they can do to fulfill the expected obligation of comedy is making eye-rolling self-referential remarks about the world they're in.

Part of me wonders if part of it is because of how barebones the games are now. It's not even the worlds being disconnected (though it certainly doesn't help) it's that areas don't have story arcs or partners to fluff up the plotlines. It doesn't even work as world-building since most of the locations don't have much that stands out about them. It's a bit like comparing (narrative-wise, not gameplaywise) Super Mario 64 to Super Mario Sunshine, except 64 had Peach's Castle and actually fun gameplay.
Yeah Color Splash had a beautiful aesthetic. I can't believe people are trying to drag it back to the lame-o TTYD/SPM style visuals.

Although it's really not just Nintendo fans. People are sperging out over the SotC remake too and that looks completely fine.
It looks ok, personally I dislike the outline, choppy animation & how it looks like Mario had the burn tool applied to him. I wish their focus on visuals were at least more on unique designs for NPCs and enemies, it's pretty dull looking at clones & recolors of Toads & Shy Guys. I gotta give props to the Emerald Circus for looking great though.
As a side thing what do you all think of the concept art here for choosing what art style they should go with? I think I prefer the bottom left outside of the Super Paper Mario-esque trees.

We don't want them to just keep re-releasing 64 or TTYD you neanderthal. We want them to build on the concepts shown in those games instead of wiping the slate clean and rebooting with concepts that are less intuitive and entertaining than a two-decade old game.
Reminding us that 1-1 of SMB existed doesn't amount to quality content.
And this is what I mean. There are no characters to bounce off eachother and create naturally-flowing comedy, so they just shove a bunch of self-referential shit in there. Self-aware remarks are the lowest form of comedy.
