Drake sword is just a very early game crutch that has low requirements. Anyone sticking with it past early blighttown is just shooting themselves in the foot. Switching to a zweihander +2 as soon as you have the stats is way more overpowered than using drake sword until you reach Queelag
You basically get something stronger than the drake sword in DS3 if you start the game with the longsword and a fire gem

Rocking a Zweihander and having a lot more trouble than I did in DS I and II. Ultra greatswords usually make the game easier, but they seem to make it harder in DS III. Bosses go down easier, but the normal mobs are kicking my ass more often. Everything seems to be a lot faster and have more stamina than me.

It's not much worse than just being able to walk up to them and stagger them until you run out of stamina and roll away to let your stamina recover for every single enemy.

It's a bit more semantics as to whether DaS3 only differentiating =70%/Can't roll means it doesn't have a light roll or that it doesn't have a midroll. I wouldn't ascribe the term light roll to 70% equipload.
Covenants in DaS3 are stickers.
DaS3 has 3 upgrade paths: Normal, special and boss weapons and normal weapons can be infused and the infusion can be removed or swapped. It's quite far removed from the upgrade paths in DaS1 where you were moving along distinct upgrade paths and might make decisions based on what you have available, rather than just upgrading your weapon when you enter the zone where all the enemies drop the upgrade material you need because it's a +3 weapon zone or a +6 weapon zone.

I think what makes me hate DS3 the most is that it was such a cop out. It was a safe bet. Both DS1 and 2 were massive risks in terms of how well the mechanics would work / be received.

I'm assuming you mean poise-break and not stun, because if you mean stun that's straight up false. You can also use literally any weapon in the game all the way through to the end so you don't need to "trial" them

There aren't many weapons that fit that bill. The Hunter Axe is pretty close. If your looking for spears, there is a rifle spear. If you are looking for something that is really good at poking and keepout, I'd recommend the Reiterpallasch. It's a Gun-Foil.

rifle spear has a very long range charge attack in glave gun mode kind of like the demon's spear charge attack but swings kinda with r1 instead of stabs. It's untransformed moveset is similar to the (short) spear with a little more range and the associated underwhelming damage. The hunter axe transformed is pure beast has a hybrid of halberd/(not great)scythe/gargoyle halberd 2 handed moveset. Tapping the charge attack does the overhead chop holding it does the 2 hit twirl (second hit floors almost anything smaller than a boss) doge/running attack is a spear stab like the halberd. R1 Combo is a left to right horizontal followed by an overhead chop. It's l2 combo (replaces your gun button since you're 2handing it) is similar to a faster version of the 1h r2 combo for the halberd and scythe. untransformed it's just an axe nothing special. It has a very practical and diverse move set good range and damage. It does look stupid though.
I don't know about the drake sword but most people I know, myself included, refused to be caught dead using a weeb stick in ds1
they made them fairly unremarkable in terms of damage, range, swing speed, durability and stamina consumption and nearly every attack they do scrapes the floor. They're easy as fuck to parry. You'd have be pretty weeb to force yourself to use them. Only thing they have going for them is bleed which is pretty useless since everyone gears against it.

Dark souls 2 would be great if they got rid of that stupid soul memory shit. I know it was to prevent pvp twinks and farming, but it killed co-op and without co-op the souls games are kinda boring
Oh yes I cheesed the drake from below the bridge on my first ever playthrough.
Funnily enough it did the exact opposite since you can get the ring within like 30k souls. If I wanted one upgrade to the system it would only count the souls you actually spent. That way could keep a co-op character in a certain area without the ring.
