I don't understand why they had to say Jango just stole the armor and pretended he was a mandalorian. The story with him and Montross was so cool. Why didn't they make it canon?

Because they intend on crapping out as many side story movies as they can now that Rogue One made them a shit ton of cash. With most of the EU being non-canon now, they don't have to worry about fucking it up and they also can retell some of those stories in their own way too.

Jango was awesome in this game. From "releasing the Senator" off the highest balcony on Coruscant to the showdown with Montross and the deal with Dooku. It introduced me to the Dark Horse line of comic books on the Mandalorians too, the prequels were a pretty good time for EU stuff.

I find retcons in general to be distasteful but yeah that one in particular was unnecessary. Its just weird to take already established characters, names, and places and then completely change their characterizations, backstories, or lore just for the fuck of it. If there gonna make them the complete opposite of the way they are then just name it a new place and people, calling them mandalorian but changing everything about them for no reason is pointless and often just pisses off the fanbase.

Half the reason Disney bought Star Wars was for the old EU. They were all for a Jedi Knight movie Trilogy.
The one who killed the EU was Kennedy on her 'STAR WARS IS MINE NOW' spree that even Disney was struck dumb by. She effectively slapped them in the face after repeatedly stabbing Lucas in the back throughout the deal, just so she could make HER fanfic canon.
Disney had literally no plans for 7-9 before Kennedy fucked everything up, Rian even flat out said that he and JJ were unsure how to take the story since a lot of it was barely there to begin with.
Everything wrong with Nu-Wars stems from one God damn woman wanting her "story" (read; fanfic agenda) to be the only had canon.

Disney wanted Star Wars to, naturally, make more movies. These movies were originally going to be

7-9 was 'on the table', but only because part of their deal with Lucas was that if they did do 7-9, they'd use some of the notes he'd written up recently.
Kennedy, who was one of Lucas' biggest supporters for the deal, was then named Disney's head on Star Wars affairs, and her very first order was to remove everything that wasn't then a mainline movie or TV show from the canon to the 'Legends' portion, and begin work on Episode 7. This was followed by pushing numerous neo-feminist type works into the 'New Canon', chief among them being the Disney Channel animated shorts about SW Female characters, as well as R1's 'Diverse' casting and the later 'Force is Female!' stunt.
Disney may be a big corporation, but they're still a business and they know what sells. Kennedy's ingrained herself deep into the planning (hence shooting for TLJ beginning literally moments after they finished TFA) to avoid getting canned, but Disney's slowly pulling the reins back on her.

So what was the purpose of unmaking Jango, Boba, and the clones Mandalorians? I think I read that Lucas never inteded Jango to be Mandalorian in the first place but surely he would've seen and okayed the Dark Horse comics and Bounty Hunter which started the connection, along with the rest of the baggage that perpetuated the idea like Republic Commando and the Karren Traviss novels.

It also makes the reason for Jango becoming the template a mystery again.

Jango was originally just a Bounty Hunter who picked up the Mandalorian attire. The Clones created from him were, both in the old and new EU, phased out after Order 66 for cheaper and more streamlined (yet less effective) Clone Stormtroopers, and later on outright conscripts.
The reason Jango became the template was simply because he was a damn good BH who could kill some Jedi.

There's evidence of it popping up now that people are realizing TLJ shat the bed a bit when it came to writing, specifically an interview where Rian Johnson brings up that they're going about the movies a bit blindly due to a lack of planning. Factor in Vader's rampage in R1 being easily one of the most enjoyable parts of the movie, as well as how suddenly we went from "Disney bought Star Wars!" to "New Star Wars Movie!" (As I recall, the TFA teaser was out not half a year after the purchase announcement), and it's obvious that something really screwy is going on in the Lucasfilm division. Disney's too experienced with these kind of things after nearly a dozen Marvel Movies for it to be on their end this time.
