How can you categorize the gameplay of the whole Sonic series (Sonic CD is very different from 3&K, which are both different from Adventure, which is also very different from Generations) and compare it to, say, Mario which has the same kind of differences between each single game?

Yeah, Crash gameplay is really shitty. It's weightless and directionless. Sonic's gameplay atleast wanted to do something - make the player build up momentum and try to keep it as much as possible.
I dislike Sonic, but I respect it much more than whatever Crash is.

No, Crash platforming is really boring. Having no momentum robs it of every sense of weight. Playing Crash makes you wonder if the devs really thought about what they wanted Crash to be as a game. Simply having obstacles to jump over does not make for good gameplay, there has to be decision making involved, which is why most platforming characters have weight to make you commit to your jumps.
Crash has no weight, so he basically just plays like Megaman without projectiles.

Kirby's level design is so bad for a platformer, I find it suprising people even consider the Kirby series platformers and not babby's first action sidescroller like Castlevania and Ninja Gaiden.

Please keep reading til the end. Megaman is great. Megaman without projectiles (and I don't just mean without Megaman's pea shooter, but also without enemy projectiles) would be pretty boring, since the focus of Megaman is combat while platforming. This wouldn't work the way it does if Megaman had weight like Mario, so he can switch directions quickly and in mid-air to be able to dodge and shoot better. If a platformer had that gameplay, but no actual combat while platforming, it would miss the point entirely.

There are plenty great 2D platformers with such gameplay like the 2D Rayman games. Also, there are plenty action platformers like Megaman with momentum/no midair change of direction like Castlevania and the Ghouls and Ghosts games. To say one is inherently worse than the other is nonsense. Crash with momentum just wouldn't work since Crash is dependent on its very precise controls since the margin of error is incredibly small, which is usually not the case in momentum based platformers like Mario.
