Some bathrooms scary, like girl bathrooms in horror games, such as Silent Hill. Some bathrooms are cozy and quite, like bathrooms in Hitman. Some a just cool looking.

It's easier in first person games since you're just taking what the camera sees, but reversing it. when you start talking about third person you need to use a bunch of matrix math to calculate the risk of polarity and single floating point precision of the view the camera is seeing reflected off the mirror onto the view the mirror is seeing. basically your computer can't handle this in real time while running a game in real time.

Old games used to literally make a dublicate of every object in the room and place it on the opposite like in a window and clone the player character. More modern games started to use a shader which simply renders the same scene at displaced camera angles but with lower resolution and reduced lighting details. Often post processing effects like AA are missing in these reflections.

All old games had to do was making a duplicate room behind a glass looking texture. They were simple rooms to duplicate. We'd have to see a lot of downgrade graphically to be able to render that much twice just for a mirror.

Duke3D's bathrooms were imporant due to the time when it was released.
We were all used to "abstract" level designs like impractical hallways of Wolfenstein or the demonic-sci-fi catacombs of Doom.
Duke was one of the first FPSs that felt like you were actually in a human-built environment. Comparing it to Doom 2 Hell on Earth, which was suposed to actually take place on earth but lacked stores, shops and bathrooms etc.
Plus I believe it was one of the first games to use mirrors. So it gets TECHNOLOGY cred right there.

I think it's more of an issue with textures and models than the math to animate them or camera positions. Environments used to have 10,000s of triangles and character models would have 1000 or so and props would have even less than character models. Textures were 256x256 on average, smaller for smaller things. Maybe 512x512 for walls/floors. Now environments are 100,000s of triangles and characters themselves are over 10,000 with objects ranging between 1000 and 10,000 themselves. The method of simulating mirrors hasn't changed, you still make a copy of the environment, reverse it, pop it in the mirror shape and then occlude what isn't visible so your'e not copying the entire world, just the room/what can be seen. But now you're doubling a lot more shit. Textures are bigger too. Models aren't that bad with instancing but textures are very resource intensive. So by creating a mirror via the doubling method, you're doubling the work load for that room. It's kind of a silly thing to spend memory on when everything else is so much better quality now.
People have posted the Prey vs nu-Prey bathroom comparison before but if you notice, the old one isn't even close in terms of all the different effects nu-Prey has. Old Prey is all direct lighting, low poly, lower res texture, no physical based textures, etc. Nu-Prey has simulated GI, radiosity, AA, Ambient occlusion, etc along with more polys, bigger textures, multiple materials, etc. Plus Nu-Prey has the excuse of the story being just a dream/simulation so seeing yourself in the mirror means seeing that you're an alien and not Morgan.
It's just a silly thing to get worked up over. I feel like there's a group who just like walking around pretty environments and don't really give a shit about games. They're responsible for this trend of cinematic FP/TP linear open world shit we get so much of.
