The old EU was never canon anyway, they just clarified that it won't be for them either. Lucas had different ideas as well. Luke being a bitter hermit in exile was his idea for example and one they actually kept.

Why do people say this? It was never as canon as the movies or TCW, but it was always canon aside from stuff like the Lego Star Wars games. Why are people revising history like this? There were even people at Lucas putting out guides that would retcon and patch up stuff when there were conflicts and things.

That isn't what made it canon. It being canon was what made it canon. Lucas Licensing had multiple levels of canon, with the movie and The Clone Wars coming first and second, and most EU stuff coming third. Below that was secondary and non-canon stuff.
