The thing is that Ocarina pretty much established the origins of everything. Then Skyward Sword came out and they had to go even further back for no reason. The introduction of Fi, Hylia, and Demise do nothing to enrich the lore.

No, aLBW takes place a hundred years later. aLttP Link is in Link's Awakening and the Oracle games. He's by far the strongest Link as he did pretty much the impossible and beat Ganon with the full Triforce and then gained it himself.

It makes Ganondorf's story all the more tragic. He started off wanting the best for his people, but was twisted by events beyond his control into a force of pure evil, and ultimately became a mindless monster. He's as much a victim of Demise's curse as Link and Zelda.

From the very beginning they've stated where the games are in relation to each other.

Zelda 2 was always a sequel to the first one, LttP was specifically stated to be a prequel, and same goes for OoT again. It becomes a bit of a mess after the N64 era, but up until that point everything was crystal clear and stated plainly.

Given WW's art style and such, WW Link could easily be an adult. And every single official "Link's age" statement has been inconsistent.

It doesn't necessarily mean Ganondorf is evil just because of Demise. The way I see it, Ganondorf was just "evil" because of the circumstances of his life, but because of Demise's curse, this evil being was bestowed the Triforce of Power which allowed him to keep reincarnating. So it doesn't contradict how Ganondorf was portrayed in Wind Waker. He's a villain that just keeps getting a chance at ruling/destroying Hyrule because of Demise's curse, but Demise's curse isn't what makes him evil.

There's pretty clear height differences between the children and adults in Wind Waker. There's no way in hell WW Link is an adult. He's taller than children younger than him, but he's half the height of an adult.

In Wind Waker he cries about how he regrets what he did in Ocarina, then turns around and tries to do it again.
