I just started rean's game and I'm not sure about some of the new mechanics. how does the bonding point thing work? do I need to plan everything out in advance so I don't accidentally end up going on a date with gaius because I talked to him too much? should I prioritize non-class vii characters like towa over party members?
also is there a way to fix the screen tearing I'm getting? I tried full screen and windowed mode and I have vsync enabled in the launcher. why are the mouse controls so shit compared to estelle's game?

you go and spend bonding points on whoever you want to get scenes with them and raise you link exp which gives you things like extra attacks, finishing blows and the such in combat, think of it as a simplified persona system,
>do I need to plan everything out in advance so I don't accidentally end up going on a date with gaius because I talked to him too much not really there's a dance at the school festival near the end of the game which gives you a little romance scene but you can pick who you want to dance with, your choices for it are based on if you have a level 5 link it's actually lower for towa and sara but their link values are hidden with them and either go to their chapter 6 bonding event, take them to town with you during the festival preparation or spend at least two festival minigame tickets on them. So no real need to plan carefully just go to whatever girl you likes events

not really there's very few doujins of cold steel in general and out of those most are by a single artist (shikei) and only 2 of those have been translated (a sara one and a sharon one)

If you want to have a dance with one of them at the end then sure, basically just spend your bonds on whoever you like and want to spend time/want to make raens waifu or who you plan to use a ton in combat if you want to power game it but that's really not necessary at all
As for unbalance each characters weapon has an attack type attacking with a weapon that an enemy is weak to gives an enemy unbalance let's whoever you're linked with do a follow up attack, there should be a full combat mechanic guide buried somewhere in the notebook thing
