The easier you made getting through the level for her, the less weight she'll lose. The game gets harder as she gets fatter but it's worth it to see her smiling chubby face. The better you do on a level, the more points you get to fatten her up.

i don't have a switch or a wii u so i can't say anything about mk8, but i've been playing a lot of mk7 recently and it's just so much fun. it feels like there's a lot less substance to it, though than some of the other more modern mario karts like double dash or wii.
also i think the roster is the most severe problem, in how severely lacking it is, and the characters they did introduce are awful. queen bee over waluigi? really?
