Dual wielding is shit in real life. Just use a shield instead. It does everything an off hand weapon does but 300 times better plus it can do more.

Nobody carried around shields. There is a difference between battlefield weapons and civilian carry weapons, also between primary weapons and sidearms. It all has to be taken into context.

You won't have a halberd or a zweihander at dinner. You wouldn't want to use one inside a ship or in the corridors of a fortified place. You wouldn't want to be carrying one while walking around town.

it was just expensive, required a lot of practice, and only really beneficial in rare conditions.
a battlefield is more pole arms and archery, swords would come out after you dropped your pole arm or if you were on a horse or used sword and shield (shield was better against archers on a battlefield obviously than a second sword). if you are already carrying a pole arm and had the sword as back up the point was it being a back up weapon so you wouldnt carry two and if you were on a horse obviously you cant hold two swords and ride.
swords were more for dueling thus a fair one sword vs one sword situation is what one would go for. in a day to day situation you probably arent carrying two swords, its cumbersome enough to carry the one and if it was a proper planned duel it would be a "fair" single sword vs sword fight.
the very rare circumstance where you arent on the battlefield and you are just walking around not expecting it and someone attacks you and you happen to be carrying two swords is just so rare it was rarely practiced and again youd have to have practice with it for this rare situation to be favorable to you. youd have to be an expert duelist, have money for two swords, carry around two swords, and be attacked randomly for duel wielding to even happen. it would be some what beneficial to have two swords over your opponents one sword if you have skill BUT then itd be similarly useful to have a shield OR far more likely in this situation a dagger.
so what style of duel wielding IS historical? sword and dagger. but that doesnt mean just because people didnt use two swords its some impossible and stupid thing to do it just wasnt historically very useful. but certainly if you are good with two swords you can beat someone with one and youll have the advantage and if you dont think thats true you are literally throwing logic out the window in favor of following whats "historical" without logically thinking about WHY its historical.

How is it sub-optimal? The other weapons are too big and bulky to have with you. Maybe a cannon could do more damage but it's not practical in most situations.

I want actual legit information on how "greatswords" were historically used in battle, whether in wars, skirmishes, or duels. Greatswords give me such a boner, I would have loved to have seen some master technique and all the roided up OG's literally de-limbing multiple peasants at a time with them.

Wavy edged blades are generally designed to scrape flesh off more smoothly. Same with south east asian blades like the kris. This is why flamberges in Dark Souls have a bonus to inflict bleed.
