It's a human interaction so basic human decency comes into play. If you're playing a fighting game with someone, especially a ranked game, their win and rewards depends on you being there until the end of it. Quitting because you're losing is the behavior of a dysfunctional child because
1. You would have finished the match if you were winning
2. It's a fighting game match, seriously they're not that long. If the steam falls out of you that fast it's not because you dislike the game it's because you emotionally couldn't handle playing with someone better than you.

There's a difference between better players and the best players. Playing around your skill level helps you improve. The stuff that works on retards doesn't work forever, even for lower level players. You'll learn and grow. Playing insanely good players when you're just a greenhorn is just gonna be your getting perfected, and not understanding anything.
Stick to fighting others around or above your level and watching replays to make conscious efforts to improve. You also need to look for information and lab stuff. Fighting the best isn't going you make you better until you reach a point you can understand what they're doing and trying to do.

Making your number go up means you get matched with other people who also have higher numbers, meaning their efforts moves them higher to give them the greater challenge they want, and the loss the other guy takes will stick him with other shitters so he can be made to lose slightly less often.
If you're quitting, you are hurting both yourself and the opponent. Take the loss so you can get knocked down and fight other scrubs.

Also the square is there because you can see someone's square before you decide to play them, so if you're a green you don't have to get assfucked by Pinks constantly (it doesn't affect ranking since on the high ladder everyone is Red or Pink).
Ranked points are mostly a cumulative amount of games played, they don't really reflect your skill level properly. Squares are better at gauging that, and they give a better insight on the player's skill level even if they don't play ranked.
Squares also don't mean that much, if you only play good players you'll have a shit square but may be much better than one that's got the same colour but just played terrible people.

This, the only fighting game I've played before for real was mkx and I damn near only fight my hardcore fighting game friend in this, I had a dark green square and got put down to blue, but wreck almost everyone I play on ranked/casual.
I've been told this game is okay for major plebs in fighting games, but how are the characters tiers? Are they somewhat balanced or does everyone pick the same 4-5 ones?

I think even at top level every single character is viable in this game but if you want to have a good team and perform well your team has to synergize well with each other and be in the right spots.
People do pick the same characters a lot but that's more because of easiness and popularity than anything. Hit is amazing but you hardly ever see him because he's one of the hardest characters in the game to play, meanwhile you're gonna see Goku Black fucking everywhere because he's easy, very strong, and is edgy Shadow the Hedgehog Goku.
