The love for sundae was first introduced in Kamiya-approved novel that acts as prequel to DMC1. Anime then reused that as homage, but it stands that while he is pretty meh with people stealing his pizza, he actually yelled at Patty for eating his strawberry sundae.

He was originally meant to have a completely different set of levels/bosses (and cutscenes by extension) in 4 so that is why he feels so forced in the final game. He was literally shoehorned in.
