Just got into this series a few days ago, and I've only been playing the first one vanilla. So far, I'm having a fun time but there are some pretty obvious flaws and the whole thing suffers from a lack of substance and polish outside of combat.
So how do I improve my experience? What mods do you guys use and how much better is warband?

Get Warband and install Floris. You won't need anything else.
That being said there's a star wars mod, a wh40k mod, 18th century mods, asoiaf mod, lotr mod...
back in the day we all played Floris Expanded
nowadays the go-to "vanilla+" mod is Dickplomacy which can be found in /mbg/

I made the same mistake getting into Mount and Blade
The map is different and theres an additional faction but Warband is in fact an enhanced edition, theres no reason to pick vanilla over it.
leave lords and kings as prisoner in some city so they can't escape
that way you have 1 army less in the map, kings usually have bigger armies, although vanilla is easy so it's meaningless
