It was five hundred years into the future.
It was established that Nanaki's race lives really fucking long.
The fact that RedXIII is alive 500 years later and Midgar is still mostly standing suggests that Meteor was stopped completely by Holy.
It's a pretty damn happy ending where you can imagine everyone lived a happy/full/whatever life after stopping Jenova and purifying Sephiroth (before the Compilation stuff is created).

Buganhagen explained that Holy will destroy anything harming the planet, that mean the Meteor and...maybe all of humankind for being fuckwits and killing the planet. So Cloud and co go save the planet knowing very well they might die even if everything goes their way. The ending is left open to interpretation except for this ending showing that obviously Cloud and co stopped the end of the world, despite maybe dying right after.

The entire point of the game was that humans are merely bystanders on the stage of time.
Regardless of the outcome of the story, it would have shown you what the world looked like 500 years later and if Sephiroth had won, there would still be no humans, only there wouldn't be anything else either.
How ironic that after all of this manipulation, power play and destruction (especially of the environment) the victor, is, in the end, simply mother nature.
The laughing at the end was supposed to imply everyone survived. Midgar was in ruins because everyone abandoned it.
