I keep trying to get into this but I lose interest before even clearing whatever the story is. All of the builds I end up doing OK with are boring as fuck to play.
SSF is self-imposed exile. The game is balanced around trading with other players for gear due to the huge amount of useless drops.
Only play SSF if you want to extend your play time and if your build doesn't require any specific uniques.

SSFHC is the only way to play. any other avenue is playing the game objectively wrong.
Man I wish I could enjoy this game. I've tried on 5 separate occasions over the years to get into it because I've always been in love with ARPGs, and the general consensus seems to be that PoE is the best. And all 5 times I've gotten bored before reaching the endgame. It just feels so dull.

Pretty much this. You end up using the same gear for ages because it takes so fucking long to get the next tier with the correct colors/links. The fact that you need an external filter to hide all the absolute garbage drops is pretty bad.

The story is shit. You really just gotta power through that garbage to get to mapping where the game actually becomes fun and builds start fleshing out
I know for most people one of the best aspects of ARPGs is the 'slot machine style gambling' with includes sometimes farming for the same item but with just the right numbers and combinations of various things aspects. But in a game where your attacks and abilities are tied entirely to your gear instead of your character and a really good drop can be render useless because it doesn't have the right slot colors or the slots aren't linked enough is just way too much.
You guys realize there are items in game to change links/colors right?
There's even workbenches for 100% guarentee crafting.
But nothing changes in maps. You just spam the same shit and numbers keep going up. Atleast before the maps you feel like you have a clear goal and can route your run.

95% of the content of the game exists in maps. The story is just to baby people into the game and learn mechanics.

I played at endgame too, but honestly I just felt like I was grinding gold to buy items for my build rather than actually getting the items for my build myself and I hated it, it's a small difference but it really sapped the enjoyment I was having.
The top players are the ones getting the items first and selling them. They don't need to buy anything.
Most of the streamers actually get free handouts from their hundreds/thousands of viewers

Not everyone is the same. Just because most people like a certain something that doesn't make it objectively the best at what it does. From what I notice people who don't like POE really enjoy Grim Dawn and Torchlight 2. Those games even support modding and private servers if you like those sort of things. Titan Quest is also a neat ARPG too that just got revived with its first new expansion in over 10 years recently.

Example? What are the drop rates for perfect rare, what's the difference between perfect and imperfect, and what would the perfect one enable you to overcome that the imperfect wouldn't?
I'm not very familiar with this game, just curious how Skinner-Box-RNG dependent it is.

More like 99.9% of the game's content is in the story and the maps just re-hash it, and scale up some of the numbers.
That's how these games always are.
Rares can roll various prefixes and suffixes
These can roll in different tiers of intervals, for example T4 = [10-15] T6 = [20-25]
And of course, they can roll a number between these intervals.
A perfect rare would be 6 good prefixes/suffixes for your build, with the highest intervals possible and the highest value possible in each of them.
You can see that the chances of this are stupidly low and the only ones that are really perfect are sold for cash or sold for mirror services AKA cloning them with an incredibly expensive and rare currency .
Gonna try out SSF for this league, what build should I play?
Something that doesn’t require too much rng on uniques and clears reasonably fast would be neat, played SRS witch and Molten Strike Inquisitor last season non-SSF

Probably another windripper pahtfinder to farm, then probably chieftan ngamahu for bosses.
I'm not that experience with ARPGs myself so I don't know if there are easy why to fix these things. The most common issue is that not even all drops of even the same exact item are equal. Go on the wiki and you see things like "damage 55-75' this not WoW where the weapon does between 55-75 per swing, it means the item can have the attack damage anywhere from as low as 55 or the highest at 75. This applies for the items other bonuses too such as how much + life it gives you and everything. The 'perfect version' of the item is when you get an item with the very highest of all attributes on that item. And even if the different doesn't matter (then why have these differences at all) it just feels shitty when you finally got that rare item you want and it has the lower amount of its full potential. And this applies to every item on every item slot.
It's worth it if you want to be able to post "SSF btw" with all your dumb questions you post on the forum/global

You're stepping too far into the autismo's domain if that's your goal. Legit perfectly rolled items with all 6 desirable mods never actually appear anyway, I bet there's only a few in the game and they're all in dumpster leagues

No, but I imagine having some zombies along with Skeleton spam is gonna meet minimum SSF requirements by the sheer power of the Necromancer's Aura node.
Also your dps doesn't depend on having a weapon at all. I imagine 4 link+ minion gem level helm is gonna carry you through lower maps no sweat

Kind of a late response, but I know about the items. I just never play far enough to get enough of them to realistically use them on the regular. I've never even seen a workbench. Don't you have to meet those NPCs enough times in the field to level them up to a specific point or something? I feel like I never saw one enough to get past level 3.
Yes, I realize in the grand scheme of things that I've basically never gotten to anywhere worthwhile in this game. But the progression just feels terribly slow when you aren't rushing through it, and rushing through it only works so well when you don't know the game inside and out. I think the farthest I have gotten is to some Colosseum on a lighting build where the boss just fucked me right up. It was a decently fun run but like I said, upgrades were just so few and far between that I lost interest spamming the same two moves.
They also buffed Necromancer to include a skeleton node choice.

Couple of auras (excluding clarity for the extra buffs alone), an offering and a curse of choice, skeletons, zombies and I think it's still too hard to pass up on spectres. Throw in a movement skill depending on what weapon type you end up using. Might be rough to fit them all but who knows. Haven't thought it much further.
Gear can be quite literally whatever as long as it has the sockets I reckon.
That's why it's suggested that you follow a guide for your first character because there's other shit to learn. Spells are easier to begin with because they don't rely on the weapon you're using as much compared to Attack based skills.
When you're leveling, all you want to look for on gear is life and resists. If you find a white 4-link then you could throw a couple alterations on it to see if you get lucky, otherwise just leave it and continue on. Noobs get trapped into using all their currency on leveling gear when it isn't worth it.
You also want to prioritize life on the tree if you don't know what you're doing.

People still fear reflected damage and also people are lazy and don't like builds that require uniques

Game is multiplayer online, so latency is a factor. If you don't live near a server, you're in for a bad time if your build doesn't rely on a server side minion with zero latency to do damage for you.
