It's a friendly way of saying "bye" and acknowledging your opponent as a person. We just spent more time playing together in a day than you spent talking to either of your parents and they'd really like to spend time with you.

originally it was a way of leaving the match early, you forfeited if you had no more chances of winning and you did so by typing gg and quitting
this was done to avoid wasting everyone's time, and as sign of courtesy by acknowledging your opponent played better than you

People were upset about all of the dishonesty that was apparent in games media and wanted more journalistic integrity.
