Fighting something like the Silver Knight seems really unfair, he just keeps attacking and not giving a fuck while my attack gets interrupted and stun locked.

They're the easiest enemy in the game to parry, and you can always bait them out to fight one at a time. You can circlestrafe and backstab if you're a huge pussy too
