Not possible. Switch cannot load assets quickly enough to support GTA5, nor can it hold enougg in ram. There would have to be a draw distance of 100m and also no vehicles, as the speed of moving vehicles would surpass the switche's asset streaming bottleneck.
They put a fucking moped in BotW a game about grass and rocks, and going 25 miles per hour was too fast to stream the assets in, despite being a game about grass and rocks.
