i believe the reason why is because the black water and the absence of a body motivates players to remain on their ship through the entire encounter. it is better this way because then we would have a lot of crew members randomly jump in the water to get a screenshot for the internet, plus creating such a thing would take a massive amount of code and development just to have frames drop when it spawns on the server.
rare's version is much more simpler and people say that the head will appear on the surface once all of its limbs are damaged.

Look up the youtube series "boundary break" and you'll see this shit is super common in games. There's no point wasting resources or processing power on something the player won't see in regular gameplay.
I expect some foresight from devs. That thing will teleport you into its tentacle mouths, and if you survive you will drop into the water and very likely see that they're just floating tentacles. Tricks are all fine and good, but you should pull them off properly if you use them

According to the youtube comments it actually can wrap around the ship, it just didn't happen in this encounter for whatever reason. It might have been glitched, which could also be why you can see the disembodied tentacles which no semi-competent developer would allow to happen through normal gameplay.

The issue isn't that we're seeing something we're not supposed to, it's that there SHOULD be a body to go along with the Kraken and the black water thing is just lazy. How fucking terrified would you be if the Kraken grabbed you, threw you off the ship, then while you're underwater trying to get back you see this big fucking monster under the ship? Instead you're fighting tentacles that suck you off the ship (the fuck?) and a bunch of pitch black water.

The Kraken is an evolving encounter. Devs have stated as such. Whilst that pisses me off, because I want to see a fully modelled Kraken, it seems all you do at the moment (and backed up by the achievement) is drive the beast off. I reckon eventually we shall have the Kraken become more aggressive in the game world and breach the surface instead of fleeing.
I'm still pissed off though. Everyone was hyped for the Kraken and Rare half assed it.

While I admit that this game isn't the greatest thing to grace consoles, it's one of the first in a long time to really make me feel like a pirate and I'm confident that Rare will add/fix things in the future to make up for a few shitshows on release. Give it time, people. The game at the moment is nowhere near as bad as No Man's Sky.
