That's a completely different genre and the game itself wasn't super good, even by Kirby standards. That said, it looked amazing.

The game itself is fine. It's a solid RPG with some fun ideas thrown into the mix. The problem is that 75% of the community (during it's peak) considered it the best game of all time and constantly circlejerked about it. It was a simple game not designed for the ridiculous amount of praise and oversaturation it got.

I would like it more if it was remade with any consistent visual style. Other than some boss sprites, Undertale looks like ass and it can't decide what it wants to look like.
I'm willing to forgive it because it was made by one guy but damn you'd think he could at least afford to pay one artist to do the entire game instead of paying 15 to do it piecemeal.

That'd be neat but Undertale needs more gameplay waaaaaaay more than it needs a visual overhaul. And it does need that too.
