Not all games are about "fun". Horror games especially are all about self-imposed challenges, both gameplay style and the mental gymnastics related to putting "yourself" into unsavory situations.

Dark Souls 3 as my first soulsborne. Especially Irithyll dungeon spooked the shit out of me because of the Jailers. In general, the idea of being able to lose currency/XP by dying makes every situation in which you're not overlevelled an extremely tense one even if you know what's happening.

That's more or less the main objectives of the game, use your map frequently and if you need it, use pen and paper to remember stuff. The game is not really convoluted as many people think and high skill runs require optimization and execution, routing is pretty simple.
Remake for sure.
If you like Remake then give 0 a chance, but go in with low expectations since it changes things up and not always in good ways.
Code Veronica is nice too.
If you have a PS3/PSP/Vita then get RE2 and RE3 as well. Skip on RE1 directors cut.

No.
Play the OG, now.
Play RE2 now and also, play all RE classic series. The only optional ones are Zero and Outbreak and that's because is a pain in the ass to actually being able to play it.
Zero also has a HD remaster so it's on steam and latest consoles. Outbreak he would have to emulate it but it's worth it because the Oubtreak games were the last true RE games before 4 came out and forever changed the series.
Is Outbreak easy to emulate now? Last time I tried it was a fucking mess.

re2 is excellent dogg, my personal fav of the classics. and let's be honest it seems likely that we're never gonna get that fuckin remake. get the original, play both campaigns in both orders, have a whale of a time
How about the spin offs such as Operation Racoon City and Umbrella Corps?
Also best version of the original Resident Evil to play?
Enjoy it while you can, my best horror experiance came from REmake and every game after that just cannot do it for me anymore.
