The SNES cinematic fighters are literally the epitome of the series we'll get in a game format. If that's not good enough because you're a pleb who can't handle forward thinking, Ankoku Bujutsu Kai is the best you'll get.
But still. SNES 1/3 are the best yyh games out there. The genesis game is a shit low fps imbalanced piece of garbage that's literally ONLY relevant because it had some even worse running 4 player shit fights.
curse of the crimson elixir on ps2 was a solid action game based on the original series.

Yes, 10/10 armor designs, 10/10 hype battles like Dragonball, it emphasizes big moves instead of normal punches being thrown around (people usually kill or cripple each other in a few moves), it has cool power level distinctions, it only has around 110 episodes (if you don't count the Hades arc anime that was produced maaaany years after the series original run), hype intro songs etc.

Sure whatever, it's easy to balance making 60 characters who all play the same, though I get the feeling if anyone played those games to be taken seriously, it'd fall apart in balance very quickly. The Universal Century stuff is best taken as one big running story I think given they're all one canon. I went at it in chronological order starting at the original, going to 0080, then 0083, then so on and "ending" at Unicorn. There's more after it but I think Unicorn acts as a nice ending.
0080 is my favorite but it is kinda a strange side story. No newtypes or anything, very sparsely used mecha fights. It's a character driven war is hell story about the side lines of the fight. 0083 makes a better action show which is what I imagine you're more looking for. If you wanna continue watching stuff though without being tied to a running canon, Thunderbolt is great and works as 2 movies, and Iron Blooded Orphans is definitely different. Can't comment on how IBO season 2 is.
