Easy cripples your rewards and plateaus character growth by them being leveled up already, which makes endgame insanely difficult.
Hard mode makes everyone have the bare minimum of their living feats at level 1, buuuut experience is much faster, you can recruit all spirits, and dungeons are harder with far better rewards.

MGR, the Revengeance difficulty increases your parry damage so it basically becomes a one-hit kill if you manage to properly do it.

The difficulty modes just impact weapon accuracy and damage, for both you and the enemies. It's easier on Master difficulty.

Dragon's Dogma can be easier on hard in the right context. Hard mode causes enemies to drop ridiculous amounts of money and gives a significant multiplier to XP gain. The downside is that enemy's deal more damage to -your character-, and you consume stamina more quickly, which isn't a big deal in a game where you can have NPC pawns tank for you and have seemingly endless free-use curatives. Enemy health pools remain the same, so you can kill them much faster since you deal more damage due to your inflated level and having the best gear money can buy.

It's only more difficult if you do a self-imposed challenge. The warrior class, for example, is horrible at low levels on hard. It's designed for winning trades with a slow strong weapon and heavy armor but generic bandits will one-shot you.
