Depends on what you want. IIRC, Emerald won the overall poll on /vp/ which was autistically thorough. Personally, I think HGSS are the best games, but that's probably because there's a heavy nostalgia factor for me as I loved the original GS a lot as a kid.

Mainline? Emerald, Platinum, HGSS, BW and B2W2 in release order. Platinum is my favorite so I highly recommend it.
Non-mainline? Mystery Dungeon, Snap, Stadium 1 and 2, Colosseum and Gale of Darkness. Today is also the release of Detective Pikachu, that might be fun.
