If multiplayer is allowed, then probably SpaceStation13, since it's autistic complicated and always has something new to try. Map building and a stream of community mods and updates would only add more to do.
If not, I think I'd choose Devil May Cry 3. It has a very high skill ceiling and it's just really fun to play.

terraria is pretty robust in the things you can do... but like everything it gets old.

I'd have to go with an MMO like Maplestory or WoW.. because you can just log on and socialise without having to play, but there's infinite shit to do if you want to actually play
