youtube isn't some ragtag setup. if you think there's a readily exploited vulnerability in the server that'll allow you to take over someone's account, you're retarded.
it's much, much, much easier to trick someone into just giving you permission into giving you access.

You're not thinking outside the box, that's what a conventional hack would take. Apparently if you know a youtuber's name and credentials you can just go to AT&T or whatever, pretend to be them, say you had your phone stolen, and get a SIM card with their number. After that it's a matter of "forgetting your password" and locking the real user out of their account. A number of famous youtubers got "hacked" this way.
