The honest answer is probably a program with a stolid history of existing for a long time (on the order of decades) in a company known for labyrinthine code, for a niche-but-large group that has high expectations in terms of usability and functionality, and that is so hypercritical for the applications its used for that bugs mean people die and billions are lost.

I therefore posit that the most complex software any of us has used is probably Microsoft Excel.

Probably Cadence Virtuoso. At least it's the most expensive, it's like $15000 for a one year license for one of the cheapest versions

3ds max/maya. Unwrapping, importing/exporting models that require a ton of different plugins, rigging a character, etc are all extremely stressful tasks. Would never ever do that shit for a living.
