What did you install in GNOME to make it look that good? Is it easy-to-remove stuff? Cause I'd like to try that but don't want to lose the chance to turn back to my current configuration which I really love (I come from Gnome 2 era and just recently installed a Gnome 3 system, don't know very well about how tweak tool and stuff work and I'm scared of making a mess like I did once in the Ubuntu 9.04 era)

Just install extensions one by one until you get a workflow you like. Its very simple to install or uninstall them with GNOME Tweak. If you don't know where to start, search for a must-have extensions list.
The hardest part of that rice was editing some parts of the GNOME Shell's theme by myself, but depending on the look you're going for its not necessary.

Some people don't like having a menu bar as it clutters up the window, other people think it's fine. It's really just personal preference, or depends on whether your OS has an integrated menu bar or not.

Is there any reason to use Open Suse instead of, say, Fedora or Slackware? I tried it once, and I was actually pretty frustrated at how hands-off everything is, in spite of the fact that I still struggled to get things like drivers to install properly.

for a second I thought that was i3. I really like the turquoise+off-white you used for neofetch. Why is it your menu bar doesn't match? It makes your desktop look really jarring. Otherwise, nice job.
If I were to use Gnome, it would probably on Fedora. It's pretty much the unofficial official Gnome distro.
