It's the first application to bring the double ratchet algo to a federated system like XMPP. Obviously, shit like voice/video calling(which shouldn't even be in a non-real time application like chatting) will take time.
Also, iOS users have Chatsecure which does everything Convo does, except OMEMO encrypted group chat and encrypted file transfer. (Kindly silly considering they announced that they were just rebranding Convo and releasing it as "Chatsecure")

Just that real time applications such as calling require a completely different setup than non-real time applications like chatting/email. The latter will have to deal with holding and dissemination of data when the recipient is offline. The former does not.

XMPP is just a protocol. Its foundation is a decentralized network of servers. You can run your own XMPP server if you want to. You don't seem to understand this, since you mentioned the "userbase" and the "outdated UI". The userbase of what? Your server? The UI of what? Your client?
Normies already use Whatsapp which implemented Signals encryption. Why would they switch to anything else? If you're not a normie, why would you use something that is entirely dependent on a provider somewhere? If the owners of Signal, Wire or just fucking Google decides to shut it down, it's gone.
