I use GalliumOS on my Chromebook, I don't really like it but is it worth the effort to switch to lubuntu? It seems to work fine but I want the lightest-weight shit possible

None. It's pretty decent out of the box. One thing to remember - do not install anything from a vendor's site, always consult ubuntu wiki.

I use Debian stretch with LXDE on my Libreboot ThinkPad T400. I grew out of video gaymen so my desktop is now a server that runs a virtual machine and my website. My ThinkPad X200 uses the stock BIOS with the Intel ME disabled and it runs Haiku OS (not actually GNU/Linux but I use that for shitposting). I also have a 2006 Intel MacBook that has Libreboot installed but no OS and it's collecting dust.

PC: Debian 9 with XFCE & Windows 10 (only for gaming)

The only benefit of NixOS over Void is the superb package manager, it's literally unrivalled. Though I am a big fan of Void.
The thing that sold Nix to me was when I discovered I was able to use the package manager on my Mac, my Fedora desktop and my FreeBSD laptop, so all of my systems were running the same software.

Gallium is optimized for Chromebook hardware. You can definitely run another distro, but chances are it won't work as well.
