Just noticed that for some reason I can't disable or remove extensions on the latest version. Am I the only one having this problem?

They do: HTTPS Everywhere, uBlock and uMatrix work fine for me (using v58) .

What's the difference between ungoogled chromium and iridium?

You have to download the extension as a .crx using a website that downloads via pasted url (chrome-extension-downloader.com or something), then open chrome://extensions and drag each CRX in.
ungoogled uses the important pieces of iridium's code and isnt Chinese botnet
