Steam in Wine works without any Winetricks libraries, you can also just execute the Steam.exe from your existing Steam directory.

I think you tried typing apt-get install wine instead of emerge wine and got frustrated about it not working.

I added options in cloveros_settings.sh about adding yourself to the games group and installing Nvidia drivers

Why does cloveros allow dbus? It's not technically poetterware, but it may as well be.

DBus is basically a convenience wrapper for good old unix sockets. It's fine.

This is a general gentoo question but I'll exploit this thread for it. If I download software (either source or binary) manually rather than using emerge, is there a clean way to install it so that portage is aware of it?

Write an ebuild for it, or just put it someplace portage won't touch like home or /usr/local.

Only way is if you make an ebuild and emerge it.

I honestly would love to see a similar project one day to just make a really awesome Sup Forums riced out mega configuration file for something like GuixSD or NixOS

You could literally just drop it in pastebin and it would be a complete declaration of the entire system. Someone would just save the text file and run it through one of these package managers
and they'd get all the hand picked software declared in it, custom compile options on any packages, automatically download custom themes and other configs, all perfectly reproducible.

That would be pretty fucking awesome.
