Is there a point in visiting Japan without a guide of some sort? I spontaneously booked a flight to england and really enjoyed my time there. Just looking for hotels and changing place whenever I felt like it. I only speak English and German, is it possible to do something similar in Japan?

it depends on the situation, sometimes you use 者(しゃ or もの), sometimes 人(じん)、家(か)etc. Just as in English there are many variations, each with their own nuances.
