In their movies they never say bye or shit, they just cut without saying a word.

In Italy we say "Pronto" ("Ready")

it's probably due to the fact that once upon a time all the communication were established through an operator
according to a different theory, it's because the first phones were adopted in the military

On ending, we usually say "Ciao" or "Arrivederci (better, it would be "A risentirci") or "Grazie" or "A presto" or whatever appropriate
