It's a measure of people doing benchmarks. After every new release there's obviously going to be a surge of people benchmarking their CPU's. keep in mind the only people buying Coffee Lake are enthusiasts, since supply is so low and there are no OEM's yet, so the people who managed to buy it are the most likely people to run the benchmark.

Market share of a benchmark is nothing in comparison to how much lastgen e5s are selling like hotcakes now. Over 1.9 million units ordered in past 2 months. AMD isn't even competeing still.
Lastgen server CPU sales are always high when a new generation hits, because reliability and stability, only the rich companies can afford to upgrade half their infrastructure when the new hotness hits, that's why EPYC won't be making much revenue until Q2/Q1 next year unless AMD managed to throw a few million in someone's hands this early in the game.

Even if Ryzen sold insane numbers at that time, it still wouldnt have shown that big of an increase in the chart. Using percentages might be a bit hard for americlaps to fathom, but those represent HUGE numbers. It would not be possible in any realistic scenario for AMD to gain that big of a market share so fast.
