Losing or no losing, there's no way. Every iOS update is signed with device-specific bits of data on Apple servers, of course they don't reveal their algorithms. When they close the signing window, you can't upgrade to that version anymore.

Going from a S8+ to a Pixel 2 XL makes no sense. You lost things like the headphone jack and memory card slot, but gain almost nothing. You get a minimally better camera with the pixel and stock Android, but that's it. The S8 is otherwise better in every way.

- Until 8.0 is officially released, or 8.0 ROMs are stable, the camera isn't great on non-stock ROMs, and Google Camera HDR+ doesn't work until 8.0. It's basically like using a phone camera in 2009 but with much higher resolution (no ISO adjustments, no shutter speed adjustments, etc) until then.

Samsung internet browser is pretty good. Faster than chrome and has support for adblockers in settings

Most likely the headphone jack on the device is damaged internally specifically where the mic control is but not the audio signal which is why they still make noise.
