They're weird because it's a bunch of random meats in flour tortillas. Only carne asada should go with flour; the rest usually goes with corn tortillas. Literally anything inside a tortilla is considered a taco though.

homemade guac
raw diced onion
hot salsa/sauce
sometimes tomato, squash or even apple or banana. Don't diss it till you've tried it, the sweetness does some good shit with the flavours.
