The difference isn't even that big. Sure 1440p may look nicer but you can't even tell it's 720p unless you're autistically close to your monitor. Besides I just plug my PC to TV and use a gamepad so it's even harder to tell it's 720p.
A 1060 doesn't even hold up in 1080p if you want high settings and 60 FPS

With his logic, a 780 Ti runs 4K. It does, 10 year old titles run maxed, and ones like Witcher 3 "run" on the lowest settings with 30-35 FPS.
Now I have a 1080 Ti and run Witcher 3 maxed out (w/ Hairworks) with stable 60 FPS. Ultra settings are a meme but if you can't hold up at least high settings with stable 60 FPS, its not running well. Though this doesn't apply to everyone, some people are "casual gamers" and only play a title from time to time, while others (like me) are hardcore gamers who spent 10 hours a day in front of their computers so you can justify a 900 € GPU.
That sounds like someone who never saw a higher resolution in reality. I was similar like you, when I had my 1280 x 800 back in 2013. I didn't knew about 1080p, and now 1080p is a "low resolution" for me.

My R9 380 4gb was marketed as a 1440p card back in the day, and since I haven't bothered with any triple A games since then it still is too me.

Proof please. It was never marketed for 1440p. The 7970 (Initial Tahiti chip) was aimed for 1080p and 1440p, but even when it was brand new it didn't run all titles in 1440p. The 300 series was midrange around 2015, it was a basic 1080p card then. Nowadays, its performance is 1050 tier, which is 1080p-Medium.

my 27 inch 4k monitor seems to large and small at the same time, I'm still having a hard time getting used to it and I actually prefer my shitty 24" 1080p monitor at work, wtf.
