What kind of job could I have? What services could I provide?

An EMP attack is a threat, but if someone is firing atomic bombs at you, you have a bigger problem. That's the military view. It's mostly a threat to things which have long wires attached to them. Mobile devices are too small to be affected. It also doesn't affect fiber optics. So no medieval society

If you have a knowledge what the fuck an EMP is and just a shred of a shit of knowledge about generating and "producing" energy, then you can become the guy who brings the dam light back on.

No. Solar flares eject electro magnetic radiation. It could theoretically breach the earth's magnetic field. If it gets bad it could even cause effects such as permanent/temporary making any electronic device useless.

After some debate and enlightening information, I'd like to refocus my original point.
If, by whatever reason, all electronics suddenly went compute, what skills do I have from going into computers and starting a Computer Engineering degree would transfer over to this new world? How could I make myself useful other than labor or fighting?
I like to think guys like us would be used for cataloging and recording and keeping track of EVERYTHING, since we're really good at sorting and sifting through massive amounts of data.
I can see algorithms being written on paper like a CYOA book, sliderules coming back into popularity, abacuses, etc.
But WHAT would we use these for?

I'd immediately find people who want to make new electronics, then I'd make electronics. Calculation machines, communication equipment, etc. The physical principles of semiconductors are simple, and I doubt my books on electronic fabrication are gone. I also doubt my bin of assorted BJTs and FETs is kill, since they're extraordinarily durable and also very well shielded. They, and other surviving transistors would be very useful for bootstrapping.

If what you're really asking is "what if the physical principles which allows electronics stopped working?" Then the answer is we'd all die because our bodies use many of these principles to function.

Not the point, how many generators will still function after a year of regular use? What conditions will they be stored in? Will they remain usable? Will they be stolen? Will fuel continue to be available? For how long? Will you have the tools necessary to repair a generator?

The problem is that you think it's just energy that can destroy electronics. It's common knowledge that voltage can destroy electronics as well. Your microprocessor operates at less than five volts. Typically less than two. Applying four volts to a two volt microprocessor is enough to damage it. In this case, you're talking about a pulse that is cited at 50 000 volts per meter. What do you think the length of your motherboard traces are? I'm willing to bet you're going to see potentials in the hundred thousands on a typical motherboard.

Some cell phones might survive if they're oriented facing the electron burst, thus minimizing their exposure to potential, but you're still talking about 500 volts per centimeter, so I can't even be sure about that.

I mostly agree. An emp massive enough to kill all electronics would also just flat kill everyone with the heat. A reasonable one would really only bring down the power grid for a few months max.

Most generators are carbureted or use fuel injection so simple an emp won't hurt it. They are simple machines and are easily repaired.
