I mostly mean the initial setup and the amount I need to keep track of to use it. I tend to watch when compiling as certain packages fail and require a bit of "fun" to get working.
I use nixos which is probably why I see gentoo/funtoo as taking too long.
I do but find tinkering with a fragile system to not be fun after trying it out

All config files are scattered in /etc/ for the system which nix in my opinion does better by having it's own configuration file handle everything. Single place to configure means less work overall.

took me less than 10 min for my other machines
also, there are ways to speed up the process, like compiling stuff only once on one machine and using it as a binhost for other machines, etc

Each configuration rebuilds the entire OS (well symlinks to updated versions of packages) meaning a rollback is as easy as choosing a past version from grub. Each snapshot is pretty light as it's just the symlink setup. Meaning if a mistake is made during configuration I just boot the previous version. If it's starting to take too much space i call the garbage collector
