Most countries have old beliefs tied to sneezing, anything from it causing susceptibility to evil spirits, oncoming disease (obviously), your heart stopping during sneezes, etc. As a result it became common in most places to wish a sneezing person well, or to bless them in someway. Now it is just considered good manners to do so.
