Should I get an iPhone 6s -new- for $500 (Not an Amerifat so no good deals here) or an 8 for $60 a month for 2 years? Is the lack of a headphone jack too annoying? What would make it worth it over a 6s? I guess I could also get an X for $80 a month but I guess that would be overkill for someone like me.

6S definitely.. if you can get one with iOS 9.3.3 or earlier (jailbreaking) and pre-slowdown update. I'm not sure which version it's a part of, but make sure you get one pre-that-update.
