I have been running my business for a while under a certain name. I did register under .ca domain but wanted a .com that unfortunately was taken, but empty. Luckily whois was available and I tracked down the owner to an Etsy store. Messaged her, turned out she didn't want it anymore. Waited for the domain to expire, check it out today $2895 WTF!
Is it normal? Is it possible that merchant has caught on that the name is established on other platforms and domains and domain automatically went to premium kind?

Especially since it's not possible to buy a domain immediately after it expires unless you are the current (just expired) owner. Everyone else has to wait a cooldown period of a few months before they can buy it.

I bought a domain, which is literally just my name, about ten years ago for basically nothing. I just use it for email, nothing else. But it's there if I need it, all for the equivalent of a couple hours work per year for domain and hosting.
