I have it running on a Debian VM. Pretty good but I wish there was a similar solution for a windows based server. Running a VM on my server just for this seems like overkill.

Pick one. Any remotely higher spike in workload renders the Pi a laggy piece of shit and a bottleneck, even for such simple jobs.

DNS doesn't need that much power. You can even run Pi-Hole on a Pi Zero.

Haven't tried the pi hole, but even on a medium sized network (50+ active clients), a pi2 running bind does just as well as a full blown server. The throughput on a pi is shit, but the latency isn't bad, and when though the ram is low, it's more than enough to hold everything it's doing in ram.

all DNS requests go through it. If it is unreachable, locked up or fucked you will have no internet access (by name) and a shotload of pissed off users.

If I turn it off my all my requests go through the secondary DNS server. I'm using a shit tier router I cant configure how I want. So I don't understand your issue. For a home network theres no reason a pi is a bad idea.

How do you even use a laptop for pihole? Doesn't the device need to be connected through ethernet? Wouldnt it break when you left?

I use one in my home (in an esxi vm) and it is superb. My TVs with rokus on them don't even show the dumb right-side roku promo ad. The youtube roku channel is 100% ad free. Every laptop, phone etc. on my wifi stops showing ads but everything else still works perfectly. It really is awesome.
