Yeah, all my games are from 2004 and below so my little old Geforce GT 740 SC is plenty for them. About the only component that I buy anymore is HDD for constant storage upgrades/expansion to my server + backups.

It's not only a GPU shortage but a memory shortage too. It doesn't matter if NVIDIA or AMD ordered more GPUs since GDDR5 is fucking expensive at the moment and the supply is limited.
The memory cartel is making sure computers are going to stay expensive for the foreseeable future. They are currently raking in record profits but are not going to significantly increase the manufacturing capacity despite increasing demand because they know the mobile phone and computer industry has nobody else to buy the memory from and it's more profitable to let the companies bid for the limited supply of DRAM chips instead of actually responding to the demand by increasing production.

I don't a 1060 6gb is all that overkill for having it in a "budget" build. I wish i knew the prices goes up this much. While i got the money, but my body is screaming that this is a very bad investition. Even a 1050ti (iphone 5s) is ridiculously expensive. (compared from before) I really hope that the next line of GPU will be less expensive. Even - 30% would be better.

I don't know of any games that can be played using integrated graphics. When my GPU broke and I couldn't afford to buy a new one, I had to use onboard graphics for over a year and it was very painful and restrictive, watching a 720p video put an immense stress on it and it sometimes struggled to process it, some web pages couldn't load. It was hell. Literally no idea what games you're talking about. Are they text-based? Well then I guess you're safe.

Yes but right now they're worried that the crypto mining induced demand could disappear or be significantly reduced at any time. It's risky to make large long term capital investments in more production capacity when they can't be sure the crypto market isn't going to suddenly collapse. Best thing for gamers and casual users would be for some other tech to take the place of GPU mining.

Just like with OPEC, that works fine until someone in the cartel starts to cheat or an outside producer ramps up production. Memory production does have significant barriers to entry but the price can't be held high forever before attracting outsiders who want a piece of the pie.

I have a job and these prices are still outrageous and beyond what I'm willing or able to pay. I did buy a PS4 just to avoid booting into Windows to play games but they're still games that I am unable or unwilling to play on console.
I can't clean the same since I started playing Total War Warhammer and absolutely love it. My R7 I bought back in 2013 is doing an okay job with it is definitely showing its age it might run into a game it can't handle or strugge too emulate PS3 games. I ended up building a whole new computer because my pre bulldozer era AMD chip because it couldn't emulate most GameCube games at full speed and was beneath the minimum requirements to play nuDoom. (which was good but not great and made me fall in love of classic Doom.) It's still pretty rare for me to play AAA stuff on PC so I could get away with upgrading to another low end card but after finally getting a job I was looking forward to upgrading to a nice mid end one.
I feel bad for anyone whose work actually requires a high-end GPU like photo and video editing or special effects in indie films.
