Aside from generally rapping over well-crafted and catchy beats (whether produced by himself or "produced" by himself), his lyrics end up depicting someone that a lot of people end up identifying with. Most people have some sort of cognitive dissonance and hypocrisy to some level but will always deny it, but Kanye just puts all of his on display for the world to see and people end up connecting with that. Again, this is probably unintentional and overanalyzing things but that's just what it seems like to me.
