I can think of plenty of amazing game soundtracks, but I'm assuming you mean scores? Dark Souls and Shadow Of The Colossus have great scores. Final Fantasy as well.

Games only got around to using real orchestras and instruments in the last 10 years. Film has been doing it since the start.
Plus the game industry started 70 years after the film industry did. Its purely a matter of time.
Soule mostly uses DAW and virtual instruments but does it very well, good composer.
the Medal Of Honor: Allied Assault soundtrack is one of the best imo. Michael Giacchino is a master composer.

Grant Kirkhope is an excellent composer. His work on Kingdom of Amalur and Grabbed by the Ghoulies are my favorite ones.
Op is right when he says that The Elder Scrolls has good music, but to be honest, the most memorable songs in all video games is the theme for GTA IV. Soviet Connection, I think it's called. It's very good.

i remember the crucible scene in mass effect 3 had that wonderful clint mansell track and the stark quiet atmosphere and it all really stood out, making the betrayal by the story a little more bearable.
