I can't really into production, but Illmatic sounds fine to me- nice, simple, smooth. Reasonable Doubt, on the other hand, sounds tacky as hell.

I agree but the production on Illmatic is fantastic and still holds up today.
The beat on It Ain't Hard To Tell is one of the greatest ever, and the rest of the album is beyond great too.
There's a reason Illmatic is so universally loved. I'm not saying it's the best hip-hop album ever, I wouldn't go that far, but if you don't like it, you probably don't like hip-hop in general. It's pretty much the epitome of what a great hip-hop album should be. It influenced everything that came after it.
