German is literally the third most prominent European ancestry in Mexico, followed by Irish.

Americans of European descent tend to be descended from Brits/Irish who had kids with other Brits/Irish or other Europeans like Germans and Italians. Mexicans of European tend tend to be descended from Spaniards who had kids with indios. So Americans of European descent are nearly all white, while Mexicans of European descent are mostly non-white.

You're confusing "of European descent" with "white". You can have a high percentage of European ancestry and still be dark-skinned, because non-European genes tend to override European genes.
